A Healthy Winter Salad - Walnut and Beetroot Salad
This is a great seasonal salad, which is full of flavour as well being supremely healthy. The leafy greens, walnuts and beetroot are all superfoods supplying vitamins C, A and E as well as protein, iron and omega 3. It's handy to keep a few of the soy roast walnuts in a jar ready to add to salads and pasta.
Vegetarian and can be vegan
For the beetroot:
2 medium raw beetroot, peeled
1 tblsp olive oil
1 tblsp balsamic vinegar
For the Walnuts:
2a cupful of walnut halves
1 tblsp dark soy sauce (or tamari wheat-free soy sauce)
For the Salad:
A mix of dark green salad leaves, such as watercress, spinach, rocket and parsley, washed and dried
4oz crumbly goats cheese (optional)
1 tblsp olive oil
1 tblsp balsamic vinegar
A little salt and black pepper
Set the oven at 175°C. Cut the beetroot into 4 - 6 wedges and coat in the oil. Roast in the oven for approximately half an hour. Sprinkle the balsamic vinegar over the beetroot pieces and toss. Cook for a further 10 minutes or until the beetroot are fully cooked.
Meanwhile toss the walnut halves in the soy sauce and place in a roasting tin. Roast in the oven for approximately 10 minutes or until the walnuts just start to brown. Be careful not to burn the walnuts.
Cool the beetroot and walnuts and place them over the salad. Crumble the goast cheese if used, and add that to the salad. Sprinkle on the oil and balsamic to dress, along with a small amount of salt and black pepper.

Favorite Citrus Vinaigrette Recipe for a soft green salad to accompany Turkey Tenderloins?
Tenderloins are marinated in a Mojito Lime Marinade, On the salad, I have thinly sliced Red Onion, Crumbled Goat Cheese, Sun-Dried Tomatoes, caramalized Cremini's, (no nuts). This is the light vinaigrette I use on Almond Orange salad.
1/4 cup salad oil
2 T. white wine vinegar
2 T. sugar
1/4 tsp. almond extract
While this doesn't have citrus in it, you could add a splash of orange juice (or lime to go with the marinade) to it or add some mandarin oranges to your salad. If you have Boston Bibb lettuce, I'd use that. Or spinach as your base.

Yummy Old Fashion Salad Recipes You Will Love
When you think of Salads do you think of a plate of greens? Green Salads are wonderful but there is so much more to "Salad" than a plate of greens! Try these salad recipes for Linda's 24-Hour Bean (everyone should include beans in their diet!), Pineapple and Cheese, and Apricot Gelatin.
LINDA'S 24-HOUR BEAN SALAD
This is an old recipe from the 1950s in Southern Indiana.
1 can green beans drained
1 can waxed beans drained
1 jar pimentoes
3 stalks of celery chopped
1 can kidney beans drained
1 can peas, drained
1 mango* chopped
3 small onions cut thin to make rings
Dressing:
1 1/2 cups white vinegar
1 tsp salt
1/4 cup Wesson oil or less
2 TBSP. water
1 cup sugar
Mix together and chill 24 hours before serving.
*In 1950s Southern Indiana a mango was a green bell pepper.
PINEAPPLE AND CHEESE SALAD
This recipe is from a small Southern Indiana church "all day service and dinner on the grounds" many, many years ago.
1 (No. 2 1/2) can sliced pineapple
1/2 lb cold Velveeta or American sliced cheese
18 large marshmallows, cut into fourths
Drain the juice from the pineapple. When well drained, dice the pineapple. Cube the cheese.
Mix:
3/4 cup sugar
Lump of butter (size of a small egg)
2 tbsp flour (rounded)
2 eggs
Stir in pineapple juice and cook, stirring constantly, in double boiler until thick, about 5 minutes. Let this custard get cold, then combine with diced pineapple, cubed cheese, and marshmallows. Sprinkle ground nuts on top (optional). Serve on a bed of lettuce leaf when chilled. Keep in refrigerator.
APRICOT GELATIN SALAD
This is an old recipe from my childhood. Use your imagination and cooking skills with the instructions!! I love these old recipes. Sometimes just reading them is as good as reading a novel.
2 large pkgs apricot Jell-O
2 cups boiling water
1 1/2 cups cold water
1 (No. 2) can crushed pineapple
2 cups small marshmallows
2 large bananas, sliced
Prepare the Jell-O; let cool before adding other. When finished, add the following topping.
Topping:
1 cup pineapple juice
1 egg, beaten
2 tbsp butter
1/2 cup sugar
Cook until thick. Add 1 package cream cheese. Put over salad. Let cool and add Dream Whip.
Good luck with this one. It sounds good, if you get it together correctly. I'm sure you experienced cooks will know exactly what to do! Don't you just love old recipes or receipts as they were sometimes called!
