Orange Cheesecake – Creamy Crockpot Recipe

Ah, the good old Cheesecake! Who has enough time to make a great one from scratch? This Crock Pot Creamy Orange Cheesecake is actually very easy to make.

FOR CRUST:
3/4 cup cookie crumbs or graham cracker crumbs
2 tablespoons sugar
3 tablespoons melted butter

FOR FILLING:
16 ounces light cream cheese
2/3 cup sugar
2 eggs
1 egg yolk
1/4 cup frozen orange juice concentrate, thawed
1 teaspoon orange or lemon zest, or dried grated rind
1 tablespoon flour
1/2 teaspoon vanilla

 

1.In medium bowl, combine crumbs with sugar. Mix in melted butter until well moistened. Pat into bottom of a 7-inch springform pan and set aside.

2. In another medium bowl, beat together the cream cheese and sugar until smooth. Add eggs and yolk and beat with a hand-held electric mixer for about 3 minutes on medium.

3. Add orange juice, zest, flour, and vanilla and beat for another 2 minutes.

4. Pour batter over crumb crust in prepared pan. Place a rack or a piece of crumpled aluminum foil in bottom of 5 quart crockpot. Carefully place the springform pan on top of all of this, so it doesn't rest on the bottom of the pot , making sure it's level.

5. Cover crockpot and cook on high for 2 1/2 to 3 hours. Turn off crockpot, don't remove lid, and leave for 1 to 2 hours, until cool enough to remove. Carefully remove cheesecake from crockpot.

6. Cool completely. Remove sides of the pan. Chill in the refrigerator for 2 hours before cutting and serving. Store leftovers in the refrigerator.

In your crockpot the top of cheesecake will not crack, as it usually does when the cheesecake is baked in the oven.

Your springform pan should fit easily in your slow cooker, with at least 1/2" space all the way around between the pan and the sides of the crockpot.
